Grenache & Viognier picked 9.9.22 from Kærskov [Santa Ynez, CA] & co-fermented for 8 days on their skins
Cabernet Sauvignon picked on 10.23.22 from Happy Canyon Vineyard [Santa Barbara, CA] & pressed after spontaneous fermentation started after 5 days
Organically farmed vineyards
Native yeast fermentation only
No fining or filtering
10 ppm of SO2 was added at bottling

Ingredients: Orange Peel, Lemon Peel, Jasmine, Chamomile, Elderflower, Corriander, Carraway Seeds, Allspice, Juniper, Saffron, Cucumber, Angelica Root, Orris Root, Cinchona Bark, Wormwood, Clover Honey & Sugar

Fiano picked 8.13.22 from Tranquil Heart Vineyard [Ramona, CA] & fermented on its skins for 28 days
Part of the wine was distilled for fortification & later added back with a blend of herbs & botanicals
